Coconut and Raspberry Bread Pudding – Eggless

Looking for a warm and comforting breakfast idea on cold mornings? Try this recipe.

Ingredients:

1. 1 cup coconut and almond milk or any plant based milk

2. 2 tbsp flax meal

3. 1 tsp vanilla

4. Pinch of cinnamon

5. 1 tbsp melted butter

6. 2 slices of bread

7. Desiccated coconut to serve

8. Raspberries to serve

Method:

1. Mix ingredients 1 to 5.

2. Chop bread into chunks and arrange on a baking dish.

3. Add the milk mixture and mix well.

4. Bake at 180 degrees for 20 minutes or until golden on top.

5. Garnish with raspberries and desiccated coconut and serve.
