Pasta in Creamy Avocado Pesto Sauce

Who doesn’t like Pesto ! I love Pesto and it’s something I can eat everyday. Tara is not a huge fan of Pesto that smells only of basil. So I added some avocado and it tasted good. Not too basil-y and creamier too, just the way she likes it.

Ingredients:

  1. A small avocado, mashed
  2. 1 cup basil leaves
  3. 3/4 cup fresh cream
  4. 1/4 cup almonds, soaked in water for at least 30 minutes
  5. 2 tbsp olive oil
  6. A clove of garlic
  7. Paprika, optional
  8. 2 cups cooked pasta

Method:

  1. For Pesto, blend together all of the ingredients (except pasta, of course 😜).
  2. Boil the pesto sauce in a pan for 4-5 minutes.
  3. Add cooked pasta and mix everything well until combined.
  4. Serve hot.
