I make waffles quite often for my daughter’s breakfast or snack. This morning I decided to sneak in some carrots and ground flax that I bought yesterday. Glad she liked them and went with a full tummy to her nursery. I didn’t add at sugar to the waffles because I usually serve it with sweet freedom fruit shot.
- 1/2 cup self raising flour
- 1 egg
- 4 tbsp milk
- 4 tbsp grated carrot
- 1 tsp flax
- Butter to cook
- Splash of vanilla
- Whisk an egg with milk, vanilla and flax seeds.
- Add flour and grated carrot and mix well until it’s smooth and lump free. If mixture is too thick, add some milk.
- Cook in a greased waffle pan until golden.
I served it to Tara with raspberries, chocolate chips, cheese, pumpkin seeds and celery sticks.
