Carrot and Flax Waffles

I make waffles quite often for my daughter’s breakfast or snack. This morning I decided to sneak in some carrots and ground flax that I bought yesterday. Glad she liked them and went with a full tummy to her nursery. I didn’t add at sugar to the waffles because I usually serve it with sweet freedom fruit shot.

Ingredients:

  1. 1/2 cup self raising flour
  2. 1 egg
  3. 4 tbsp milk
  4. 4 tbsp grated carrot
  5. 1 tsp flax
  6. Butter to cook
  7. Splash of vanilla

Method:

  1. Whisk an egg with milk, vanilla and flax seeds.
  2. Add flour and grated carrot and mix well until it’s smooth and lump free. If mixture is too thick, add some milk.
  3. Cook in a greased waffle pan until golden.

I served it to Tara with raspberries, chocolate chips, cheese, pumpkin seeds and celery sticks.
