Baby Spinach – Basil – Cashew Pesto

I made a small jar of pesto last night using baby spinach. This is the first time I didn’t follow the traditional recipe. I added spinach for more nutrition and cashews instead of pine nuts because I had a kilo of cashews in my kitchen cupboard.

Ingredients:

  1. 1 cup basil
  2. 3/4 cup baby spinach
  3. 50 gms Parmesan
  4. 1 clove of garlic
  5. 2 tbsp olive oil
  6. 1/3 cup cashews

Method:

Super simple – blend all the ingredients together and pesto is ready. 😊
